- 200ml of extra virgin olive oil
- 1 lemon
- 2 yolks
For a good result of the mayonnaise it is important that all the ingredients are at room temperature. Beat the eggs with a whisk, always in the same direction and trying to maintain a regular speed (if you use a blender, set it to minimum). Continuing to mix, pour the oil slowly, very slowly, to prevent the mayonnaise from going crazy. When the sauce begins to acquire a certain consistency, stop stirring and gently incorporate the lemon juice, salt and pepper that you have previously mixed together.
